Dalgona coffee

If anything good came from social media during lockdown, it was this coffee recipe that blew up over night! It is now one of our favourites and becomes even more special when turned into our ‘Adult’ version.

Ingredients
2 tbsp Instant coffee (Also works with decaf)
2 tbsp Granulated sugar
2tbsp Hot water
Milk (We used semi skimmed but any dairy alternative should also work)
Ice, for serving
Method
Step 1 – Measure the coffee, sugar and water into a medium or large bowl.
Step 2 – Using a whisk (Electric is best although a hand whisk and some patience will work too), mix the ingredients together until it becomes thick and fluffy.
Step 3 – Fill your glass about ¾ of the way full of your chosen milk. You can also add ice if you wish.
Step 4 – Gently spoon the fluffy coffee mix on top of the milk. Insert your straw (if using, we recommend a metal one for easy stirring) and enjoy.
'Adult' Option:
Now here is where it gets interesting. At Christmas we decided to try to make this into a cocktail and have become slightly obsessed ever since.
You’ll need to do exactly the same process to make the coffee as before. The changes happen to the bottom section of this drink.
Instead of just milk we used the following per serving:
3 double measures of milk, 2 double measures of Irish cream and 1 double measure of any chocolate or coffee liqueur of your choosing to make this a boozy treat. I do recommend using decaf for this version though (so you can’t blame me for being awake all night!).
